Chirstmas superfood salad with pomegranate
If you want to make sure your Christmas dinner has at least a few healthy options then this is a great salad to include. Made with broccolini, green beans, baby spinach, herbs, pomegranate, goats cheese and pumpkin seeds. Best of all it takes just 20 minutes.
20 Minutes. Serves 4 – 6.
1 cup quinoa
250g goats cheese
2 bunces broccolini
1.5 cups baby spinach
200g green beans
6 sprigs parsley
½ cup pepitas
- Using absorption method, cook quinoa. Place the quinoa in a small saucepan with 2 cups cold water. Bring to the boil until liquid is completely absorbed. Cover pot remove from heat and set aside minimum 15 minutes.
- Trim the ends of the broccolini and beans and cut in half. Bring a pot of salted water to the boil and blanch the beans and brocolini for 2 -3 minutes. Drain and rinse under cold water. Set to one side.
- In bowl combine roughly chopped parsley, quinoa, juice of the lemon and season with salt and pepper. Toss through the broccolini, beans and baby spinach. Top with pepitas, pomegranate and crumbled goats cheese.
