Curried egg and lettuce cups

“These are a great and easy brekky or lunch to get up if you’re stuck for inspiration,” says Carla from Bodypass, the mastermind behind the recipe.  “I always boil a bunch of eggs on a Sunday to use during the week, they’re so nutritional, healthy and filling.”

Ingredients:

4 boiled eggs
1 avocado
1 tsp flaked sea salt
pepper
1 tsp cumin powder
½ tsp turmeric
¼ tsp chilli powder
2 shallots
½ bunch coriander
juice of ½ a lemon
1 cos lettuce

Method: 

1. Boil the eggs, peel and roughly mash
2. Chop the shallots and coriander
3. Mash the avocado
4. Combine everything together and spoon into lettuce cups
