Wholefood banana bread with coconut cream Gluten-free! Dairy free! Refined sugar free!

Banana bread is delicious, yes, but also full of sugar and yeast and flour and all those things that make us feel sluggish. Put some pep in your step with this guilt-free banana bread and watch your digestion thank you.


3 ripe bananas
¼ cup coconut oil, melted
¼ cup almond milk
2 eggs
1 tsp vanilla extract
1 tbsp rice malt syrup
1 tsp cinnamon
½ tsp nutmeg
½ cup quinoa flakes
½ cup coconut flour
1 tsp gluten free baking powder
½ tsp Himalayan rock salt
1 tbsp chia seeds
½ cup walnuts, chopped

Coconut frosting

400ml coconut cream, (refrigerate tin overnight, upside down)
¼ cup coconut oil, melted
1 teaspoon vanilla extract
1 teaspoon rice malt syrup

½ cup shredded coconut, lightly toasted


  1. Pre-heat oven to 165 degrees Celsius.
  2. Mash bananas with a fork, add wet ingredients and stir to combine. Then add dry ingredients and mix thoroughly, making sure mixture is moist.
  3.  Spoon mixture into a lightly greased mini loaf tin and bake for approximately 1 hour, until brown on the outside and slightly moist in the middle.
  4. Remove coconut cream from fridge, scoop out the hardened cream and blend with hand held blender. Then add coconut oil, vanilla extract and rice malt syrup. Place it back in the fridge for at least 1 hour to set.
  5. Allow bread to cool completely, then coat with whipped coconut cream and shredded coconut immediately before serving.

This bread will taste equally as delicious with a lashing of butter, coconut oil, nut butter or tahini as it does with the frosting.
