The smug-healthy salad - Juice Daily

The smug-healthy salad It's got kelp noodles, so of course it's smug.

Not your everyday noodle salad that’s for sure. Bodypass co-founder, Carla McMillan, created this nourishing dish for The Cook’s Grocer. “Made with kelp noodles and teamed with autumn veg, this dish is made for the weeknight detox,” said Carla. You will feel super smug after eating this one, and it’s the perfect antidote to Easter indulgences.

Serves 2.


340g kelp noodles
1 large carrot
1 Lebanese cucumber
150g mushrooms
3 kale stems
3 sprigs coriander
1 spring onion
1 sheet nori
1cm ginger
1 tbsp rice wine vinegar
1 tbsp tamari




Start by grouping and preparing your ingredients into each of the components of the dish. Rinse vegetables and herbs.

1. Remove noodles from packet and rinse under water. Place noodles in a heatproof bowl. Cover with boiling water from kettle and set aside for 4 – 5 minutes. Rinse under cold water and drain.

2. Remove the stalks of the kale and slice. Place in a bowl and cover with boiled water and a pinch of salt. Soak for 1 – 2 minutes. Rinse under cold water and drain. Set aside. Peel and grate carrot. Halve the cucumber lengthways and slice into thin half moons. Thinly slice the mushrooms and spring onions. In a small bowl whisk together the premixed dressing with grated ginger and a drizzle of extra virgin olive oil.

3. In a bowl combine the salad, cooked noodles and dressing. Toss to dress. To finish, fold nori sheet in half, then half again twice more. Using a sharp knife slice the nori into thin strips. Top to your liking and serve.
